Aldi challenge week 2 – what’s for dinner?
The first week of meal planning was AWESOME!!! So many tasty meals that made my first week back to work from maternity leave a gazillion times smoother. So, let’s preview what’s coming up this week.
Just a reminder that I am following an existing meal plan, adding and modifying as needed for my family but all of the original ideas and recipes are from MashUp Mom.
Sunday: Slow Cooker BBQ chicken drumsticks served with pesto Parmesan rice & iceberg wedge salad with peppercorn ranch dressing + bacon bits
Monday: Veggie stir fry over cooked rice, with pineapple & oranges on the side.
Tuesday: BBQ Chicken tacos with a spring salad.
Wednesday: Chili with beans topped with shredded cheese & sour cream and served with Tortilla chips and sauteed spinach
Thursday: Chili potatoes served with cucumber, broccoli florets, and oranges.
Friday: One pot mozzarella chicken dinner served with an organic mixed greens salad
Looks like a great lineup. And my shopping was right at point, coming in at $74
